thai chilli is nice too though some varieties of it are kinda sweet.

back when I was a gobby teenager me and my mate went to a curry house in Bradford and took 2 lasses there for a sophisticated evening. Only, I ordered a chicken masala and said 'make it hot' to which the reply was 'you taking the p1ss?'. tw@t who was waitering challenged me in front of these 2 birds to try 'HIS' choice of curry. So me been a pr!ck agreed. He said if I eat it all he'll pay for it. Well, I actually did like hot curries back then and this was a trick I used to do regular and believe me it usually got me a free curry. I polished the lot off, naan, chips and everything.

that'll teach him.

I couldn't do it now mind, Patia is my limit now.

Mate, why didnt you just put "Mild, Medium , Hot, very Hot" as choices then? Instead of 4 types.

I do a mean curry, my family request a pan of it when we have family do's.
I always marinade it overnight in fresh lemon juice, tonnes of garlic, salt n pepper and a little sugar.

When it's done well, a Chicken Tikka Massalla is beautiful.

I like hot stuff, but I think the chillies kill of any other subtle flavours.

When you marinade it with the lemon and that, do you add everything to it straight away?? I was told by a guy in our local Indian to marinade the chicken in salt and lemon juice for 30 mins first cause it starts the cooking process, then add your other ingredients and marinade for 24 hours. I had a go and you can actually see the chicken start to turn white! It makes a hell of a difference as the chicken is a lot more tender.
Would'nt add sugar to a masala tbh. Its sweet enough with out it. As for chillies, if a recipe askes for 2 chillies I usually double the amount. I find when you put them in the blender with garlic and ginger it makes them milder. Also when I use chilli powder I always use extra hot.

All the Indians that I have seen running food oriented places of business either operate convenience stores or Mexican restaurants.  I really like Afghan food though.  Love me some Samboosak.

If we are talking about spicy chicken, I'll have to go with 3 Mile Island wings: Image

Favourite curry is chicken Phal it is so hot it is never on the menu, you have to ask for it
specialy it is the absolute best.

But i love Pepper i was brought up on it, i love scotch bonnets i eat them with everything
including Bacon and Eggs :D
